In college, I was a pretty strict vegetarian. One of my favorite things on earth was the “Nature Nurture” sandwich from a little bagel shop downtown. The other day, some pictures of my sister-in-law’s garden bounty got me thinking about this crunchy, gooey sandwich again.
Luckily, the bagel shop is still in business and kind enough to post their menu online. In just a few clicks I had a short list of ingredients and was able to recreate this fantastic sandwich for my kids. (I still can’t believe they ate sprouts!!)
The Nature Nurture Veggie Sandwich
4 regular size everything bagels (I was lucky enough to find locally made bagels, but Lender’s or another frozen brand would do the trick. I’m not talking about those super huge ones though)
1/2 lb thick sliced provolone cheese
1/2 lb thick sliced smoked cheddar from the deli case
1 head romaine lettuce, rougly torn
1/2 small red onion, thinly sliced
1/2 cucumber, thinly sliced
Alfalfa sprouts (get the smallest container you can find)
Optional, sliced tomato and Italian dressing
Open bagel and put one slice of provolone and two slices cheddar on one side. Microwave for 20 seconds or until bagel is warm and cheese is slightly melted.
Top with about 2 tbsp alfalfa sprouts, several slices onion, lettuce, tomato (if desired) and 3 slices cucumber. Sprinkle with Italian dressing if desired. Serve immediately.
